Chef Bren Herrera stopped by the A&C studio to talk about her culture for Hispanic Heritage Month and share one of her favorite recipes.

Caribbean Jerk Chicken Tacos

Ingredients:

- 1 lb boneless, skinless chicken thighs, cut into strips

- 2 tablespoons Caribbean jerk seasoning (store purchased)

- 1 tablespoon olive oil

- 1 red bell pepper, thinly sliced

- 1 yellow bell pepper, thinly sliced

- 1 small red onion, thinly sliced

- 1 cup pineapple chunks

- 8 small-medium corn tortillas

- Fresh cilantro, chopped, for garnish

- Lime wedges, for serving

Directions:

1. In a bowl, toss the chicken strips with Caribbean jerk seasoning until evenly coated.

2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes.

3. Remove the chicken from the skillet and set aside. In the same skillet, add the sliced bell peppers and red onion. Cook until softened, about 3-4 minutes.

4. Return the cooked chicken to the skillet, along with the pineapple chunks. Stir to combine and heat through, about 2 minutes.

5. Warm the corn tortillas in a dry skillet or microwave until soft and pliable.

6. To assemble the tacos, place a spoonful of the chicken and vegetable mixture onto each tortilla. Garnish with chopped cilantro and serve with lime wedges on the side.

Ginger Beer Cocktail

Ingredients:

- 3 oz sparkling wine (preferably dry)

- 2 oz ginger beer

- 1/2 oz fresh lime juice

- 1/4 oz elderflower liqueur (optional for added floral notes)

- 2 dashes of Angostura bitters

- 1-2 sprigs of fresh thyme

- Ice

- Lime wheel or twist for garnish

Directions:

1. Chill your glass: Place a coupe or champagne flute in the freezer for a few minutes to chill.

2. Muddle thyme: In a cocktail shaker, lightly muddle one sprig of thyme with the lime juice to release the oils.

3. Mix: Add ice to the shaker along with the elderflower liqueur (if using) and bitters. Shake gently to combine.

4. Pour & Top: Strain the mixture into the chilled glass. Add the ginger beer and top with sparkling wine.

5. Garnish: Gently slap the remaining sprig of thyme between your hands to release more aroma, and use it as garnish along with a lime wheel or twist.
