One-Pan Holiday Meal

This meal is perfect for a holiday gathering and is something all of your guests can enjoy. Traditional holiday flavors and seasonings compliment seasonal vegetables for a comforting & rustic meal. Please feel free to get creative and add in your favorite veggies into the mix!

Ingredients:

4 Large Sweet Potatoes, chopped

1 cup Veggies of Your Choice

3 Apples, chopped

2 Large Onions, chopped

1 Cup Whole Cranberries

1 Package of Beyond Meat chopped, Beyond Meat Crumbles or Chopped Veggie Burgers

1/2 cup chopped toasted walnuts or pecans

Marinade:

2 tablespoons Vegan Buttery Spread or 1/4 cup plant based/olive oil

2 teaspoon French Style or Dijon Mustard

2 teaspoons Poultry Seasoning

1 teaspoon Thyme

1 teaspoon Orange Zest

1 teaspoon Lemon Zest

1. If using nuts, place chopped nuts baking sheet at 350 Degrees F until golden brown, about 6 minutes. Keep an eye on them to make sure they don’t burn. Remove from oven.

2. Turn oven to 400 Degrees. Put chopped sweet potatoes, veggies of your choice (optional) and onions into a roasting pan.

3. Prepare Marinade by combining melted Vegan Spread or 1/4 cup plant based oil of your choice with dried herbs, mustard, lemon zest and orange zest in a small bowl.

4. Put chopped Beyond Meat, Beyond Meat Crumbles or chopped Veggie Burgers in bowl and cover with 1/2 of marinade.

5. Pour remaining marinade over chopped sweet potatoes, veggies of your choice (optional) and chopped onions in roasting pan, stir gently to coat evenly. Roast for 20 minutes.

6. Add chopped apples, stir and roast for 15 minutes.

7. Add in cranberries, stir and roast for another 10 minutes.

8. Add marinated chopped Beyond Meat, Beyond Meat Crumbles or chopped Veggie Burgers on top and roast for another 10 minutes.

9. Remove from oven and sprinkle with toasted nuts.

10 Serve & Enjoy!

Poinsettia Punch

Recipe:

1 Bottle Sauza® Signature Blue Silver Tequila (750ml)

8 Oz Lemon Juice

6 Oz Grade A Maple Syrup

1 cup of Fresh Cranberries

1 cup Cranberry Juice

6-8 Sticks of Cinnamon

8 Mint Sprigs

Combine all ingredients in a pitcher and refrigerate until chilled. Pour into a punch bowl. Serve over ice with additional mint sprigs for garnish and a candy cane straw for holiday cheer. Makes 17 servings.
