Smokin' Salmon Sensation

POTATO CHIPS:

- 2 Potatoes sliced into 1/4

- Fry potatoes at 350 degrees until golden brown and crispy

- Lightly sprinkle kosher salt

CHIPOTLE SPREAD INGREDIENTS:

- 2 cans of Chipotle adobo peppers

- 2 cups cream cheese spread

- 1/2 cup sour cream

- 1 tablespoon Cajun seasoning

- 1 tablespoon onion powder

- 1 tablespoon fresh dill

DIRECTIONS: Mix all ingredients in a food processor and add to a piping bag

TOPPING INGREDIENTS & DIRECTIONS:

- 2 lbs fresh salmon 

- Mix 1/2 cup brown sugar, 1/2 maple syrup and 6 tablespoons liquid smoke

- Marinade salmon with the mixture in the refrigerator for 2 hours

- Take the fish out of the refrigerator

- Drain juices and wrap in foil

- Cook for 40 minutes on low temp

- Check fish for pinkish color and flake with a fork

- Now with the piping bag, spread on each potato chip

- Add salmon, red onions, chives, capers, and parsley
